This list includes Anime and Manga. I thought about putting in order from best to worse, but I threw it out after number 20.
You may notice I'm a big shonen and comedy fan, but I do go outside of my preferences.

1. Fullmetal Alchemist Brotherhood
Funny yet serious. Love both series. |
|
|
2. Sket Dance
Very funny show but sometimes the jokes get annoying and old. One of my favorite sad stories is Switch's origin story. I wrote the suicide blog for his stories. |

3. Chibi Vampire
The series was funny and way better than the anime. Too bad it ended too quickly. |
|
|
4. Samurai Champloo
I like the characters but the anime plot did not give me a satisfying ending. |
|
|
5. Yu Yu Hakusho
It was great both the manga and the anime. |
|
|
6. Fairy Tail
Still Watching. Caption Anna's images and taking notes as I watch. It's my major year long project. I keep on working on it and found new wiki editors through. I loved this anime and how it brings people together. |

7. Dragon Ball
I like Dragon Ball and Dragon Ball Z for the characters such as Android 17 and Trunks. |
|

8. Shaman King
Since I worked on wiki project of Shaman King (February 2011), I grown to love it. |
|

9. Soul Eater
Short anime.I think it's around 50 less than D. Gray Man. |
|
|
10. Xiaolin Showdown
*I don't think this is an anime. Even though it was Kids WB, it was a funny show along with Jackie Chan Adventures. I missed the old days of Danny Phantom and Static Shock, too. |

11. D.Gray-Man
This series is dark with only Kumui as head of comic relief above Allen's debt and Lavi's age requirement in women. Finished the anime. Reading the manga. |

12. Blue Exorcist
I saw it on Anna's list. Since her tastes is similar to mine, I try it out. I loved it and started working on it. (July 2011) |

13. Descendants of Darkness
I like it because some doctor is really cool and psychotic. |
|
|
14. Deadman Wonderland
Wales got me into the manga series. It was full of plot twists, and no matter how messed up the story is, some characters are memorable. |

15. B. ICHI
I like how the author select their names. The series was rushed and ended too quickly. I still remember the stories. |
|
|
16. Rave Master
Definitely better than the vampires, but the anime ended too short. The manga was good, but I remember that their journey was too long and seems never ending. |

17. Fullmetal Alchemist
The ending is ambiguous but it was more realistic than it's second anime counterpart. More people died in this anime series than brotherhood, and Scar was a badass and died as badass. |

18. Case Closed
I watched the series in the fall of 2011 on the channel utb or 18.2 in my county with my little brother and sister. My siblings and I love the show for how some cases end with an emotional lesson. Episodes with special characters such as Shinichi, Kogoro's wife, and Hattori always seem special. |

19. Naruto
A bit disillusioned but I still watch the anime. Kakashi is my favorite male ninja of them all, and Hinata is my favorite Kunoichi. |

20. Supernatural
I like the live adaptation and the second episode was sad and beautiful. |

21. Gosick
Ever since I volunteered to help HalberdierV2 and Auron570 by reformatting the episodes, HalberdierV2 told me to watch it. I fall in loved with the series because of the characters. |

22. Serial Experiments Lain
I watched this series when I was in middle school on Tech TV's anime unleashed. The opening is so nostalgic that gives me chills. |

23. Zatch Bell
I used to hate it, but I grown to love it. |
|
|
24. Fate/Stay Night
I think the anime's beginning was a bit boring, but I loved Saber, Rin, and Archer. It was until the end, the anime got to me. Saber's love for Shirou was beautiful and sad when she has to say good bye to him. The movie was great, but it went too fast. I never played the game, so I did not realize that this movie was based on Unlimited Blade Works "Rin Tohsaka" route. |

25. Rosario + Vampire
I still think the manga is better than the anime. Inner Moka needs more spotlight. |

26. Vampire Knight
Finished the anime but not eager to finish the manga. Missed Zero and short hair Yuki. |

27. Bleach
Disillusioned but still waiting for fillers to end. |

28. Binbogami ga!
Summer 2012: I love this show. It did fan service effectively. The characters are damn hysterical. It was a bit short, and I hope it continues. |

29. The Pet Girl of Sakurasou
Winter 2013: Daniel recommended it to me. I had to catch up to him in the discussion thread. I watched it with my little sister. I thought I wouldn't like the series because I'm not a big slice of life fan. However, I fell in love with the series and its characters. |

30. Robotics;Notes
Fall 2012 - March 2013: Acura Max recommended it to me, and we got started on the wiki project. I enjoyed the series. Sure, it was boring at the beginning, but I kept watching it in hopes of something exciting. It delivered. Frau was the character I liked the most. |

31. Shin Sekai Yori
April 2013 (first week): Finished the series during spring break. My little sister's friend recommended it, and I watch it with her friend and my little sister. We did a marathon and finish it in three days. It was pretty dark, psychological series, and it had some surprising twists at the end. |

32. The Severing Crime Edge
After seeing the trailer and premise, I wanted to try the anime when it came out in Spring 2013. I got hooked on the first episode. Love the romantic relationship between the hair queen and the guy who loves cutting hair. |

I haven't made a list about all the animes or the manga I have read.
As for One Piece, I have never watched it. You may know people who watched One Piece and also watched Fairy Tail because of some similarities. Check Annabanana's list. I don't have time to watch a lot of anime due to school and the wiki work.

Not really. It just involves a zombie living with three drop dead gorgeous ladies of the supernatural: a magical school girl, a necromancer, and a vampire ninja.

I don't consider Is This a Zombie? to be ecchi. The fanservice has even been toned down in the second season. But then again, I consider ecchi to be over-the-top fanservice being about half of the show or more (which means I consider a smaller number of series to be in the category than how it is defined.
Shows that I would recommend that I enjoy are Heaven's Lost Property, Sekirei, HOTD, Freezing, and IS.
Those anime can all be found online and viewed legally (I'm pretty sure, anyway (and that is if that is how you prefer to view anime)).
But shows on the lighter side of ecchi that I enjoy are Negima, Love Hina, and Demon King Daimao.
I have others I enjoy but like I said, I separate ecchi from regular fanservice.
As for manga, there are a ton of wonderful and fun series. Two of the manga I have enjoyed the most are ecchi series that have wonderful stories and plenty of heart-along with comedy and romance. Those are Sundome and Nana to Kaoru. But be warned, those two series have Parental Advisory listed for them and contain a number of odd fetishes that are not considered "normal".

I totally just got reminded of some very funny ecchi series. They are Kanokon and Ladies vs. Butlers.
