Your question has prompted me to come out of my lurker status. Soul Eater is certainly one of my favorite shows. The show features a strong mix of action, humor, and seriousness, without relying too much on any one theme. This, coupled with Atsushi Ohkubo’s distinct art style, make this show stand apart from so many others. There is a large cast of characters and each one feels unique and necessary to the story being told. Also, despite being 51 episodes long, there is very little filler. With the exception of the occasionally humerous interlude, most of the episodes keep the story moving and flowing well.
You can watch some of the episodes for free on Hulu and at Funimation's website. That might help you get a better idea about the series and whether you will like it or not. The manga is also currently being released in the US by Yen Press. It seems they are doing a good job with the translation and publishing. The manga follows the plot of the show pretty closely, only diverging towards the end of the anime.
