I would have added Miaka and Tamahome from Fushigi Yuugi (maybe because I just finished watching it again). They stick together despite mind control, enemy armies with magical powers and being from two entirely different worlds. Then, when Tamahome finally discovers they can't stay in the same world... simply has himself retroactively reincarnated in order to be together.
Not forgetting Wolf's Rain - Kiba and Cheza
But yeah, I like this list...
