I'm not sure whether the voting will be open to those outside of Japan, so I went ahead and included the Japanese names so you guys can participate-- and you'll want to, because in order for a Blu-Ray release to come available in the US, the hi-def material has to be available in Japan. That doesn't guarantee that a Japanese release will lead to an American release, but it's a good first step.
So...aside from Gurren Lagann (which I figure is obvious for most), what would you vote for, if you could only pick one? And what do you think should be on the list that isn't? I'm tempted to vote Haruhi, but I'm not sure if Blu-Ray would make that big a difference for her, so I'd vote Valkyria Chronicles.
As for what's not on the list...I'm surprised there aren't more classics, like Sailor Moon (and don't give me that “it'd look like crap,” that hasn't proven true for the Dragonball Z Blu-Ray releases).
Your turn!

Kara no Kyoukai Bluray though, if there is ANY series worth it's weight purely in animation quality and would benefit at all from an HD release, it'd be KnK.
Here's just a few examples from the latest film of how it stands up.
Even relatively simple scenes have a lot of detail with both lighting and design.
