personally, i prefer the 00 series as it is not too long yet it has all of the important things one should have in a gundam series and i think it would be one of the most innovative to come up with the gn drive theory which introduces a whole new story, and most of all the background setting is very realistic.

Wing -love the MS's, coolest characters.
CCA (I know its a movie but so what)-Char kicks ass
Zeta - not a big fan at first, but the second half onward was really excellent, Tomino gundam at its finest.
Seed tied with 00 - I don't much care for the Seed characters, or the MS' really, but for some reason I really like the show overall. 00 was great animation and I like 00 Raizer, but some of the plot elements and antagonists were forgettable.
MSG- char is the best in Zeon regalia
GSD- I can't say I like Shin or Kira, or Athrun, or the MS', but hell for some reason I still liked this show.
the Unicorn OAV i've seen, ive not read it.
G Gundam- cool but pretty out there.
But I like all gundam really.
X and F91 are probably my least favorite, I doubt much by into the hype for 8th MS, and Turn A was weird but interesting how they tried to tie everything together.
In conclusion Gundam is great.

If you mean "most interested in", I would have to say the original, if only to understand how this one idea, this one franchise has survived 30 years.
If you mean "most interesting to watch / have watched", Wing or Seed are top contenders, in all the wrong ways. What can I say, I love a train wreck.
In that regard Wing might have the upper hand: Gundam Wing actually sprouts WINGS. Think about it, actual angelic WINGS. Come... ON!

@Gaff: actually instead of putting a stabilizer of somekind, Gundam wing scientist , decided to make it have wings that can flutter FEATHERS, FETHING FEATHERS, and then take off the shield, which apparently a sign they realized Gundam wing pilots never need any shield due to how big their plot armor are
