So I started building Gundam models just because they look badass and I wanted a new hobby, but I really like the way they look and would like to know their back-stories. I've only watched Gundam Seed on YTV when it was on but nothing after that. Friends say I should either watch Gundam Wing, Endless Waltz, or Gundam 00. Any tips on which one I should start with to learn the most?

I'd say start with the OG Mobile Suit Gundam, then watch 08th MS Team and 0080: War In The Pocket for some added backstory. If the oldschool animation isn't your thing, then the first season of Gundam 00 might be worthwhile, but I've only watched two episodes so I couldn't tell you.
