Well, let's see...it is a bit early to be making assumptions, however from the evidence we do have I believe it is a sort of acidic power (Much like Gluttony from Fullmetal Alchemist, pre-Brotherhood) as seen from this scan when her saliva drips to the floor and makes a sizzling sound as smoke appears and when she first shows up we see steam or smoke coming from that saliva on her lips:

I dunno if I want to say her power is acid, only because Magellan's poison powers seem to have an acidic effect as well, like when he fought Luffy and his poison melted the rock on Mr. 3's wax and again when he burned Blackbeard and his crew:
Maybe hers has a great acidic effect, like anything it touches automatically gets dissolved, and the other theory is like Taichokage said, her being able to eat anything, but then that would be very similar to Wapol's fruit power. One thing I am pretty sure of so far is that she seems to be more of a Paramecia than a Logia or Zoan. Then again maybe she is just a cannibal with no fruit powers, I mean a lot of One Piece characters have done some crazy stuff and had no fruit powers. Also she seems to be a part of the giants due to her size. This is just my theory anyway.
