My 8 year old daughter is a BIG fan of CASTLE OF CAGLIOSTRO and  Nasuca, both of which show desaturation due to their age, However she is very aware of the look of these (and other) films, and she associates them with being old (not better or worse, sort of like how I thought of black and white movies when I was young).
Based on this, and my own love of Casablanca, I think the the medium (including tech) are secondary to compelling story telling.

when i went to college colour theory was a a major module.there have been big studies into it,,.even if us normal plebs dont pick up on it its a major consideration for the animaters,,,
Imagine if  they used a dull palette for love hina, likewise imagine if they they used a high key (technical term) palette for ergo proxy,,neither anime would have been the same..
A good palette is always a big plus for me.

The time I notice that a palette choice the most is when it's used poorly. Other than that I enjoy seeing what palette choice a particular anime chooses. being a dark dude myself  I love dark atmosphere setting in darker Noir anime when used properly. Sometimes I notice its too dark and I cant see anytthing. I like it when its dark blue hue for that cold metallic feeling or warm amber look for a dark candle light fill. I think it really adds to an anime in a way that simply mirroring the outdoors exactly does not and it makes it more in the tone with other live action films.

100%, the color definitely plays a role in what I will watch, I gotta be in the mood for certain types of anime.

Durarara had a super cool colour scheme! I liked it a lot.
